Ceylon cinnamon, often called “true cinnamon,” adds warm, naturally sweet spice with a softer, more delicate flavor than common cassia cinnamon. We choose Ceylon because it delivers the cinnamon flavor we want with much lower coumarin levels than many cassia varieties.
